The secret is a kind of home grown peppermint called "chocolate mint". I can't but it anywhere so the only source is my garden and my mum's garden! The colour is entirely from the mint itself.
Ribbons of salty dark chocolate complement the cooling mint beautifully. Personally I prefer these large chunks of chocolate which have a satisfying crunch but are not too hard to the thin streaks of chocolate you get in stracciatella.
Ingredients: organic whole milk, double cream, sugar, egg yolk, glucose, fresh mint.
